The Perfect Recipe to Say Hello to Fall!

You know what’s crazy? The fall equinox is tomorrow! I can’t believe how fast this year has flown by, but here we are.
I love Fall. Back to school season and football games and chilly weather are all just so awesome and nostalgic.
The only thing I don’t love about Fall is that eating healthy gets a little harder. It’s SO much easier in the summer! Am I the only one who feels this way? Who wants to eat salads or grilled chicken when it’s cold outside? I want warm comfort food! It’s been my struggle every single year.
That’s why I love a good soup. It totally fits the Fall atmosphere, it’s definitely a comfort food, and it’s super healthy (if you do it right). So to help you out, I’m sharing my go-to recipe for creamy butternut squash soup—super yummy and cozy and healthy.
BUTTERNUT SQUASH SOUP
½ butternut squash
¾ c chicken broth
1 T onion flakes or ½ tsp onion powder
¼ tsp nutmeg
¼ tsp garlic powder
pinch Italian seasoning
salt and pepper to taste
In a medium saucepan, boil 1-2 c water. Remove seeds from squash and cut into large chunks. Boil until soft. Drain water into a container and set aside. Using a fork and a knife, peel skin off the squash add to blender. Add remaining ingredients and blend until smooth. Add enough drained water to achieve desired consistency.
